Lardo is cured back fat, also known as “Strutto” in Italy. Modelled after the famous Italian Lardo made in Valle D’Aosta, This Lardo comes only from Sicilian Pigs raised naturally on a free-range diet; with hints of juniper, it is delicious as an antipasto sliced thin on crusty bread, sprinkled with a little olive or truffle oil. Alternatively, use our Lardo in cooking as a substitute for more expensive pancetta.

Lean and flavourful, bresaola is enjoying increasing popularity within UK and the Europe. Bresaola is a meat cut taken from the beef rump. This one is organic and it is coated with a mix of pepper, cinnamon and white wine and left under salt for a few days. The salt is then removed and the meat left to cure for up to 3 months. Obtained only from a Sicilian Cow “Cinisara” breed and left to mature in the fresh air of the mountains around Corleone. In Italy it is commonly served on a bed of rocket leaves, with parmesan shavings and an aged balsamic vinegar or is at its best drizzled with extra virgin olive oil, lemon juice and pepper and left for up to an hour before serving. But it also fantastic on pizzas.
